This new project comes from the botanicals Gut Oggau grows for biodynamics. These plants were selected for their ability to revitalize the soil, prevent common vine diseases, or increase vigour, but it turns out, when treated gently, they're also delicious. Nettle, chamomile, yarrow, dandelion, wormwood are grown on limestone either between the rows of vines or in their small garden. Each plant was harvested separately at optimal 'ripeness'. A combination of dried and fresh plants are steeped and fermented to make a concentrated tea which is then sweetened with honey from their hives. A small amount of organic lemon juice was added before bottling with a touch of carbonation. It is unfined, unfiltered, has no added SO2, but is pasteurized for stability.
