2024 PREMIÈRE GRUE PINOT GRIS
This wine comes from Jenkins Vineyard in Four Mile Creek. The fifteen-year-old vines are planted in clay and were harvested on the 18th of September. The grapes were destemmed and left on skins for four hours before being pressed into tank for cold settling. Two days later the must was racked into concrete egg for fermentation which took three weeks. After a seven-month élevage, the wine was bottled unfined and unfiltered. Only 100 cases were produced. 11.7% ABV, RS 1.3 g/L, TA 5.3, pH 3.6
2022 CLAIRE DE LUNE RIESLING
This wine comes from Jenkins Vineyard in Four Mile Creek. The thirteen-year-old vines are planted in clay and were harvested on the 15th of October. 10% of the grapes were fermented whole-cluster for 20 days while the rest was direct pressed after a three day cold soak. In total, the wine took 37 days to ferment dry. After a seven-month élevage in concrete egg, the wine was bottled unfined and unfiltered. Only 106 cases were produced. 11.1% ABV, RS 0.8 g/L, TA 7.2, pH 3.11, 7ppm SO2
2023 BLONDE PET-NAT
This wine comes from Jenkins Vineyard in Four Mile Creek. The twenty-eight-year-old vines were planted in sandy soils. Whole-clusters were gently pressed for two hours before the juice underwent a three day cold settling. The must is then racked and fermented in concrete for twenty-two days before bottling. It spent a full year on lees before being disgorged. 125 cases were produced this vintage. 12% ABV, RS 0.8 g/L, TA 5.2 g/L, 3.7 pH
2023 MOUFLON
This wine comes from Jenkins Vineyard in Four Mile Creek. The fifteen-year-old vines are in calcareous clay-loam soils with additional silt, limestone, and gravel. Pinot Gris (63%) and Riesling (37%) were whole-cluster fermented in concrete egg for three weeks. After pressing, it undergoes a seven-month élevage in the same vessel. The wine was bottled unfined and unfiltered. Only 110 cases were produced. 12% ABV, RS 0.9 g/L, TA 5.5, pH 3.6, 5ppm SO2
2024 ENDLESS ROSÉ
The Merlot (54%) for this cuvée comes from Saunders Family Vineyard on the Beamsville Bench. Cover crops thrive next to the 22-year-old vines in silty loam soils. Pinot Gris (37%) and Muscat (9%) come from Bock Vineyard on St David’s Bench. The seven-year-old vines enjoy calcareous clay-loam soils with additional silt, limestone, and gravel. The Merlot underwent a nine-day carbonic maceration before being pressed off to finish fermentation in egg shaped flex tank. The Pinot Gris and Muscat were co-fermented, whole-cluster in egg shaped flex tank for two weeks before being pressed off. After a seven-month élevage in stainless steel the wine is bottled unfined and unfiltered. Only 95 cases were produced. 12.2 % ABV, RS 0.7 g/L, TA 5.2 g/L, 3.47 pH
2023 RUBY PET-NAT
This wine is made exclusively from Pinot Noir from Bock Vineyard in St David’s Bench. Soils here are interesting: Tavistock and Toledo, fairly slow draining loam over clay. At 137m above sea level, the fourteen-year-old vines see minimal tilling. The grapes were partially destemmed (40%) before undergoing a two day cold maceration. The must is then brought up to temperature and ferments on skins for seven days. The wine is then pressed off and a few days later is bottled to finish fermentation. After thirteen months on lees, the wine is disgorged. 164 cases were produced. 12% ABV, RS 1.4 g/L, TA 5 g/L, 3.5 pH
2023 DAVID EAGLE GAMAY
This wine comes from Jenkins Vineyard in Four Mile Creek. The thirteen-year-old vines are planted in clay and were harvested on the 27th of October. The grapes were partially destemmed (40%) before a three-day cold soak. The wine is then fermented for just shy of two weeks with minimal cap management (judicious pump-overs and punch-downs) before being pressed into concrete for a seven-month élevage. The wine is bottled unfined and unfiltered. 140 cases were produced. 11.2% ABV, RS 1.5 g/L, TA 5.9 g/L, 3.7 pH, 5ppm SO2
2023 LE MAILLOT CABERNET FRANC
This wine comes from Jenkins Vineyard in Four Mile Creek. The twenty-year-old vines are planted in clay and were harvested on the 3rd of November. The grapes were partially destemmed (60%) before a three-day cold soak. The wine is then fermented on skins for five days with minimal cap management (judicious pump-overs and punch-downs) before being pressed into concrete for a six-month élevage. 2021 NÉGOTIANT CABERNET FRANC
This wine comes from Grimsby Hillside in Lincoln Lakeshore. The nineteen-year-old vines are planted in silty clay loam over calcareous red clay. The grapes were partially destemmed (15%) before a five-day cold soak. The wine is then fermented on skins for three weeks with minimal gentle pump-overs and punch-downs before being pressed into concrete for a seven-month élevage. The wine is bottled unfined and unfiltered. 194 cases were produced. 12.5% ABV, RS 0.8 g/L, TA 5.9 g/L, 3.5 pH, 6ppm SO2
