PAST WINES

2020 ELSE PINOT GRIS

The grapes for this cuvée were farmed by Stephen Hacking in Summerland. Whole clusters were foot crushed before being gently pressed into stainless steel for fermentation. After a short élevage in tank the wine is bottled with 20ppm of SO2. 129 cases were made. 11.7% ABV

2020 ELSE MUSCAT

This organically farmed plot of Moscato Giallo is planted on silty soils in Summerland. The grapes are destemmed and fermented on skins for fifteen days with gentle cap management. The wine is then pressed off into neutral puncheon for two months, and then racked into stainless steel for an additional four months. The wine is bottled with only 15ppm of sulphur. Only 86 cases produced. 9.4% ABV

2017 SYNOPTIC

Echo Bay Vineyard is located right above Skaha Lake minutes north of Okanagan Falls. This steeply sloped site faces south-west from within a large gully. Farmed organically with additional biodynamic preparations by Kelsey and her family, the vines are getting healthier each year. This classic Bordeaux blend is made from Merlot (39%), Cabernet Franc (22%), Cabernet Sauvignon (14%), Malbec (11%), Carmenère (7%), and Petit Verdot (7%). The grapes are destemmed, gently crushed, and fermented independently of one another. After 4-5 weeks on skins the wine is pressed off into a variety of barrels, a 20% of which were new this year. After eighteen months of élevage the wine is blended, and after a short resting period the wine is bottled with 30ppm of sulphur. It spends an extended period of time ageing in bottle before release. 360 cases were made this vintage. 13.8% ABV

2017 CABERNET FRANC

Every year Kelsey has the opportunity to experiment. She’s been presented with ultimate freedom so she’ll often hold back barrels she thinks deserve to stand on their own. This year Cabernet Franc reigned supreme. The grapes were destemmed, crushed, and fermented in open top tank. The wine spent eighteen months in barrel (50% new) before being bottled with 30ppm of sulphur. 120 cases produced. 13.5% ABV

2016 CABERNET FRANC / MALBEC

Every year Kelsey has the opportunity to experiment. She’s been presented with ultimate freedom so she’ll often hold back barrels she thinks will complement one another. This year Cabernet Franc (60%) and Malbec (40%) were perfect foils. The grapes were destemmed, crushed, and fermented independently. The wine spent eighteen months in barrel (20% new) before being blended together. After a short resting period the wine is bottled and set aside to age. 13% ABV, 3.77pH, 7.2 TA.

2019 ELSE JACKO CABERNET FRANC

This conventionally farmed vineyard is owned by Kelsey’s good friends. Located just north of Oliver, these vines are only three years old. The grapes ferment for less than a week on skins before being pressed off into neutral barrel for six months of élevage. At bottling, 20ppm of sulphur are added. Only 45 cases produced. 11.5% ABV

After eighteen months of élevage the wine is blended, and after a short resting period the wine is bottled. It spends an extended period of time ageing in bottle before release. 13.4% ABV, 3.75pH, 4.5 TA.
