The grapes were whole-cluster pressed into tank for fermentation and an eight month élevage. The wine was then racked and bottled with Champagne yeast and sugar for secondary fermentation. On May 4th, the wine was disgorged without dosage. It is under cork and cage. Only 309 cases were produced. 11.5% ABV

After six months, the wine was racked and bottled with Champagne yeast and sugar for secondary fermentation. On June 12th, the wine was disgorged without dosage. It is under cork and cage. 2025 ODE TO SAPPHO
This Marechal Foch comes from Hancock Vineyard in Naramata. The site, currently in organic conversion, is west facing and features sandy loam. The grapes were hand destemmed before being pressed into tank for fermentation. The juice almost looks like red wine due to the high concentration of anthocyanins. The wine is the racked into bottle for secondary fermentation with a little organic sugar and yeast. It was disgorged early to retain primary fruit flavours. 20ppm SO2, 11.3% ABV
